Summer Goodies

We’ve been busy, busy, busy around here…but here are some of the things we are really enjoying this summer:

  • Watermelon! I could eat this all day…every day. I get giddy at the thought of cutting one up and sitting in the sun with a book in hand. Ahhhhhh….bliss.
  • Kale avocado salad…same thing. Total addiction. I’ve been eating this nearly every day for a long time. I’ve tweaked it a bit from my original posting…you can find the updated version here. I am loving the addition of raisins and pine nuts. Oooooh! And the nori! Snipping up some sheets of untoasted nori into your salads give it a delicious sushi flavor.
  • Tropical green smoothies. We’ve been stuck on one concoction around here: 1 frozen banana, 1 whole orange, frozen mango/papaya, FRESH pineapple, spinach, a tad bit of stevia, and enough water to blend smooth. Delicious!

    My 18 month old is eating so much watermelon that she is soaking through her diapers in record time and her poop has turned from green to red! Nothing like green smoothies and watermelon to keep the bowels moving!

    The way you feel about watermelon is how I feel about blueberries! We are eating through GALLONS a day…speaking of diapers, you wouldn’t believe what that does to my babies diapers! ๐Ÿ™‚
    That smoothie sounds delicious! I am needing a smoothie revival, so I will have to try that one!

    For us it’s been cantelope and cherries. My hubbie eats cherries like they are candy, and my son and I can polish off a whole cantelope in one sitting. Oh my. At least it is healthy! =)

    Sounds like we are on the same wavelength. I do a tropical smoothie with boatloads of kale. I LOVE IT!

    I hear ya about the watermelon!!! I’m crazy in love with it and eat it almost every day when it’s in season. Yum Yum Yum! It’s so refreshing and cooling on the body ๐Ÿ™‚

    I LOVE watermelon too. Am so in agreement about eating it every day! To me, that and some “kitchen sink” guacamole would suit me so fine!!!!

    just wanted you to know you have a new fan! i’m inspired to start eating more fruits and veggies, give up diet coke once and for all, and start eliminating white sugar, too. we joined a csa this summer, so they’ll be no shortage of organic, locally-grown produce in our house! keeping these healthy habits going during the winter will be the real challenge…i’ll keep checking your blog for great ideas! thank you!

    I made the tropical green smoothie today! It was delicious and my two yr. old gave it a thumbs up! He said is was REALLY, REALLY good and he doesn’t often use really twice in the same sentence! Thanks for sharing the recipe.
    I also got tempted into buying a watermelon (I was trying really hard to wait until they were in season at my farmer’s market), but alas, we can’t stop eating them now. They make a very satisfying afternoon lunch!
