Homemade Pizza Night

Tonight we made supper for our small group and we decided to make homemade pizza. We don’t normally make a lot of pizza…I don’t think I’ve made it for 2 years! But tonight was a special night. Bella and I made the dough in the bread machine during the day, and then assembled the pizzas right before everyone arrived. The crust was soooooo tasty, that I just had to share the recipe. It’s super easy to make pizza dough in a bread machine, just set it to “dough” and you’re good to go. Our machine takes 90 minutes for the dough cycle.

* 2 teaspoons dried granulated yeast
* 3 cups bread flour
* 1 teaspoon salt
* 2 tablespoons sugar
* 2 tablespoons olive oil
* 1 cup water, plus 2 tablespoons water (warm / 80 deg)

After I pulled it out of the machine, I put it in a bowl greased with olive oil and covered it with a wet towel. This kept it moist for a couple of hours until we were ready to make them.

Our toppings were pretty simple…just sauce, mushrooms, and cheese. Well, rice cheese. I’ve gone dairy free again (and feel soooo much better), so I picked up some rice cheese yesterday with the hopes that it would melt a little and remind me of the oooey gooey mucous-forming cow’s cheese that I’ve grown to love. I was pleasantly surprised…it did melt quite well and tasted really good! Yay. Don’t worry, I didn’t subject our small group to the rice cheese. I even added pepperoni to their pizza πŸ™‚ We made some romaine salad with homemade balsamic dressing and it was a perfect meal.

Side notes:

  • My favorite homemade pizza topping combination is artichoke hearts, sun-dried tomatoes, spinach, fresh basil, and feta.
  • The best vegan pizza I’ve ever had at a restaurant was in Boulder, CO at Playgrounds Cafe. It consisted of roasted yams, roasted red peppers, tofu, pesto, and tomatoes. Yum!
  • My favorite frozen pizza is Amy’s Roasted Vegetable No Cheese Pizza: shitake mushrooms, roasted red peppers, sweet caramelized onions, and marinated artichoke hearts. So, so, so good.
  • I sent Matt on a mission to find me a bread machine awhile back, and he brought home a really nice one for $6.00. Thank you thrift store!

    Hi Sara,
    I can’t seem to tolerate much dairy either- although I just started an anti candida cleanse and I am hoping that all my food sensitivites might be related to this over growth of yeast in my body. Once I clear it, I might be able to enjoy corn again!
    Anyhow, I have found that things seem to go well with raw goat cheese. I don’t get all the same symptoms as I do with cow’s milk. Alta dena brand and Mt. Sterling both make really yummy cheddar syle goat cheeses that are raw. They are good raw, but also good melted. We take an idea out of Natalia Rose’s book and make pizzas. We use tortillas (she suggests sprouted, but we use brown rice since I am also gluten free). We use eden brand pizza sauce (the only one I have found without citric acid- which can be from corn), but muir glen is good or home made sauce would be great. Melt some goat cheese on it (which deletes the raw factor unfortunately). In the summer it is really good with garden zucchini and fresh basil and mushrooms. Anyhow, it is a really fast, yummy meal that costs less than going out even though it may a bit more costly than other meals we make. Also the goat cheese seems to digest better with the starch combination of crust better than when you combine cow’s milk with starch- if you are sensitive to that sort of thing.
    So a vote for goat cheese I guess is the point of this!

    That pizza at Playgrounds was delicious but sadly Playgrounds has had to close…boohoo! I am looking for a good gluten free pizza dough recipe. If any of your readers know of one let me know. Going gluten free has been good the thing I have miss is pizza! Not because we ate much in the first place, its just KNOWING I can’t have it.

    Denise…if you’re reading, can you give Natalie your gluten-free crust recipe? It’s quite tasty.

    What brand of rice cheese to you use? My youngest child had issues with dairy when he was an infant/toddler, and the rice cheese at my local health food store did not melt well.

    MMM. That looks delish. My favorite pizza ever can be found at Wasatch Pizza in Salt Lake City. Pizza with pesto/tomato sauce, with spinach and tomato topping…..YUM.
    One thing I also LOVE to do with my pizza is put fresh avocado on it or another combo is arugula with fresh shaved parmesean and salt and pepper. yummmmmm.

    Yay for Gluten free pizza! I only make the crust from Whole Foods now-a-days as it’s completely foolproof and non-celiacs have no idea it’s gluten free. I buy several boxes at a time. It’d be worth buying a case of it because it’s so easy and convenient. It’s the 365 brand. Bette Hagman has several recipes for GF crusts in her “Gluten Free Gourmet” series of books, but I was never able to master a single one of them.

    Oh Sara, we are always on the same wavelength. I’m heading back towards dairy free as well. I feel so good dairy free! ..and that crust you made is almost identical to the wheat crust I made when it’s just the kids and I. YUM!

    This looks and sounds SO good. I don’t have a bread machine. Do you think I could make this recipe with old fashioned kneading? I’ve always wanted to make my own pizza, but I haven’t been brave enough to try my own crust.

    Niki…You can definitely do it with just kneading. Just Google “homemade bread kneading” and it follow the instructions for times, etc. Then just use this recipe.

    Kristin…yes, I’ve been looking for a good one, and this one did the trick! πŸ™‚

    Your pizza looks delicious! We make homemade pizza maybe three times a month. I use the 5-minute a day artisan bread recipe from Mother Earth News (go here: http://www.motherearthnews.com/Real-Food/Artisan-Bread-In-Five-Minutes-A-Day.aspx) for the dough. Since it is easy to mix up and it keeps in the refrigerator for 2 weeks, I almost always have some in there. When we want pizza I just get dough out, roll it into a circle, put it in my cast iron skillet, add sauce, cheese, and toppings. It’s done in 15 minutes, CHEAP, and I know the ingredients.

    yay for your $6 bread machine! at the apartments that we live at we have a free pile section and someone left a bread machine there… i snagged it and wonder how i survived without one for so long… they are AMAZING!!!

    After eating vegan for about a year, I have really come to recognize that I love cheeseless pizza. The tastes are so much more vibrant without the wad of cheese! I mix a little nutritional yeast in my sauce. I notice that when we make pizza at home, the rest of the family sort of eyes my mountain o’veggies pizza with longing while they munch on the cheese and pepperoni. Hehehee!

    gluten free sox fan has a great GF pizza dough recipe… we nix the yeast out of our pizza dough too, the little guy is on a gluten-free, casein-free, yeast free diet…
