Yum yum yum, looks delicious. I’m thinking mustard greens with the egg and toast would be good too. I think poached eggs are the best.

Yum-E! I craved spinach + eggs with my last pregnancy, so I combined them in every which way, but NOT poached. I’ll have to try this soon. I ordered those poach pods, now I need to use them!

are you guys no longer vegan???

    • 10. livelightly  |  April 13, 2011 at 3:40 pm

No…we haven’t been fully vegan for a long time (3 years?). Eggs are a really great way for us to get good/cheap protein, especially for the girls. And I just like them. πŸ™‚ We don’t do cow’s milk…just eggs and goat cheese.

Funny, I just went through and watched your Q and A’s and heard you say you ate eggs. Sorry I didn’t do my research first! Awesome green smoothie video! Also, how else do you get protein?
We do a lot of beans, but I feel kinda cruddy all the time 😦

I’ve been doing some browsing at some good food websites and stumbled across the suggestion at https://happyfoody.com/2011/03/30/poached-bling/. […]

Words to Eat By

"It is easier to change a man's religion than to change his diet." -Margaret Mead

"I don't understand why asking people to eat a well-balanced vegetarian diet is considered drastic, while it is medically conservative to cut people open and put them on cholesterol lowering drugs for the rest of their lives." - Dean Ornish, MD

β€œFinish each day and be done with it. You have done what you could. Some blunders and absurdities no doubt crept in; forget them as soon as you can. Tomorrow is a new day; begin it well and serenely and with too high a spirit to be encumbered with your old nonsense.” – Ralph Waldo Emerson
